    Hello and welcome to The Leafy Table.  I’m Jen, the recipe creator and writer.  I love to cook and find new and fun ways to prepare vegetables.  My passion is showing how tasty veggies can be!

    Here you’ll find easy recipes featuring a wide variety of vegetables that can fit in with any diet.  Whether you’re an omnivore, vegetarian, or vegan, all of these recipes can work for you.

    About Me

    I absolutely love eating vegetables although I certainly didn’t start off like that. I found the key is to make veggies in a variety of ways: sauteing, roasting, baking, air frying etc. Just bland boiled vegetables won’t impress anyone’s palate.

    As a mom of three kids, I know that food needs to taste good or else there’s no use in preparing healthy foods!  Instead of trying to hide vegetables, I like to make them so tasty that they’re happy to at least try them.  My once picky kids have come a long way and now actually ask for certain veggies like my roasted smashed radishes.

    I find inspiration from my CSA (community-supported agriculture) box. It’s so fun to pick up a new batch of veggies, some of which I probably don’t use frequently. Then the fun is finding different ways to prepare them.

    Where do you get your CSA?

    I pick up my CSA box at Dreyer Farms in Cranford, NJ.  To find a CSA by you, check out LocalHarvest.org.

    Seriously, do your kids actually eat their veggies?

    They do now but it wasn’t always that way.  It took time and preparing vegetables in all different ways.  When my youngest was about 6, we discovered that she really liked baked eggplant cutlets.  After that she was more willing to try eggplant in other dishes since she knew she liked it.

    Are there any veggies that you don’t like?

    Not many, but I don’t like broccoli rabe.  It’s the only vegetable that I won’t eat.

    Fun Facts

    • I live in New Jersey with my husband, three kids, and three cats.  Everyone in my house loves to cook.
    • When we aren’t in NJ, we love spending time in Maine where we like to sample the local produce like their fiddlehead ferns and wild blueberries.  We always try the local cuisine wherever we travel to.
    • While I love eating veggies, I absolutely can not grow them.  I’ve had many failed gardens in the past.  One day I dream of living on a large plot of land with a huge vegetable garden and fruit trees.
