First, wash, peel and cut your carrots. I like mine cut like carrot sticks. Try to make your carrot pieces close to the same size so they cook evenly.
Place the carrot pieces in a bowl with the olive oil and a sprinkling of salt and pepper. Stir to coat. Place the carrots in the basket of an air fryer.
Bake at 375° for 6 minutes. Shake the basket around and bake for another 6 minutes.
Meanwhile, prepare the soy glaze. In a small bowl, whisk together the maple syrup, soy sauce, rice vinegar, miso paste, and ground ginger.
Place the roasted carrots on a plate. Add a few tablespoons of the glaze on the carrots and stir them to coat. You will not need to use all of the glaze. Serve and enjoy!
Store cooled carrots in an airtight container in the fridge for up to 3-5 days.

It's important to try to get the carrot pieces close to the same size. This way they will cook evenly without any burnt ends or hard carrot pieces.
The soy glaze isn't super sweet as the miso paste adds a salty umami flavor. You can leave out the miso or add more maple syrup if you want the glaze to be sweeter.
