Air Fryer Carrots With Soy Glaze

These glazed carrots are super quick to make in the air fryer. They're sweet and savory with a delicious umami flavor.

Ingredients

  • 6 carrots
  • 2 teaspoon olive oil
  • salt and pepper, to taste
  • 2 tablespoon soy sauce
  • 3 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon miso paste
  • ¼ teaspoon ground ginger

Instructions

  • First, wash, peel and cut your carrots. I like mine cut like carrot sticks. Try to make your carrot pieces close to the same size so they cook evenly.
  • Place the carrot pieces in a bowl with the olive oil and a sprinkling of salt and pepper. Stir to coat. Place the carrots in the basket of an air fryer.
  • Bake at 375° for 6 minutes. Shake the basket around and bake for another 6 minutes.
  • Meanwhile, prepare the soy glaze. In a small bowl, whisk together the maple syrup, soy sauce, rice vinegar, miso paste, and ground ginger.
  • Place the roasted carrots on a plate. Add a few tablespoons of the glaze on the carrots and stir them to coat. You will not need to use all of the glaze. Serve and enjoy!
  • Store cooled carrots in an airtight container in the fridge for up to 3-5 days.

Notes

  • It's important to try to get the carrot pieces close to the same size.  This way they will cook evenly without any burnt ends or hard carrot pieces.
  • The soy glaze isn't super sweet as the miso paste adds a salty umami flavor.  You can leave out the miso or add more maple syrup if you want the glaze to be sweeter.
