These glazed air fryer carrots are the perfect side dish. They're delicious, quick and easy to make, and cook in only 12 minutes. The soy glaze gives this dish a tasty umami flavor.

Carrots are such a versatile veggie. They're delicious when prepared in a savory side dish, eaten raw, or in a sweet dessert. (I had carrot cake for my wedding cake!) This simple side dish is both sweet and savory and super easy when made in the air fryer.
Air frying is one of my favorite cooking methods. You can roast veggies so much quicker than in the oven with little to no oil. When you roast vegetables, they release their natural sugar making them even more flavorful like in my air fryer acorn squash.

Ingredient Notes

- Soy sauce - I always use less sodium soy sauce. If you are using regular, you may want to cut back on the soy sauce in the glaze.
- Miso paste - You can find miso paste in most regular grocery stores or in any Asian market.

Variations
- Leave off the glaze for simple roasted carrots.
- For a sweeter glaze, add a tablespoon of brown sugar or more maple syrup.
- To make them sweet AND spicy, add some red pepper flakes.
- Add ½ teaspoon of sesame oil to the glaze and then sprinkle some sesame seeds on the roasted carrots.
How To Make Air Fryer Carrots

Step 1: First, wash, peel and cut your carrots. I like mine cut into sticks so they look like carrot fries.

Step 2: Place the carrot pieces in a bowl with the olive oil and a sprinkling of salt and black pepper. Stir to coat.

Step 3: Place the sliced carrots in the air fryer basket. Try to fit them in a single layer.

Step 4: Bake at 375° for 6 minutes. Shake the basket around or flip the carrots and bake for another 6 minutes. You want the carrots to be tender golden brown.

Step 5: Meanwhile, prepare the soy glaze. In a small bowl, whisk together the maple syrup, soy sauce, rice vinegar, miso paste, and ground ginger. Set aside.

Step 6: Place the roasted carrots on a plate. Add a few tablespoons of the glaze on the carrots and stir them to coat. You will not need to use all of the glaze. Serve and enjoy!

- It's important to try to get the carrot pieces close to the same size. This way they will cook evenly without any burnt ends or hard carrot pieces.
- You don't need to use too much salt and pepper as the glaze will give the carrots lots of flavor.
- The soy glaze isn't super sweet as the miso paste adds a salty umami flavor. You can leave out the miso or add more maple syrup if you want the glaze to be sweeter.
- Save the leftover glaze to use on other veggies like broccoli, green beans or Brussels sprouts. It's also delicious on crispy tofu.
- I recommend using parchment paper that's made for the air fryer for easy cleanup. It has holes in it so the air can move through it.
