    Instant Pot Cabbage and Potatoes

    This Instant Pot cabbage and potatoes recipe cooks in about 5 minutes!  It’s a simple dish and the cooked cabbage has a mellow flavor.  It's so quick and easy that it's perfect for a busy weeknight.

    This cabbage side dish is easy to make and while it's great for St. Patrick's Day, I like making it throughout the year. You can even make it into more of a main dish by adding a protein source. To keep it vegan/vegetarian, you can mix in a can of white beans (rinsed and drained).

    Ingredient Notes

    • Potatoes: Use your favorite potato.  I often use russet but red potatoes would work great as well.
    • Cabbage: I use regular green cabbage in this recipe.  You can also use red cabbage for a slightly sweeter flavor. Savoy cabbage can work as well in this recipe.
    • Vegetable broth: Use homemade vegetable broth or packaged.

    Variations

    • Add in some sausage (regular or vegan) with the cabbage and potatoes.
    • Add in some carrots, peeled and cut into large pieces.
    • For a little sweetness, add some apple chunks.
    • For a richer flavor, add some butter (regular or non-dairy) to the finished dish.

    How To Make Instant Pot Cabbage and Potatoes

    Step 1: First, prep all your vegetables.  Slice your onion into rings, core and chop your head of cabbage into 1-2” pieces, and peel and chop your potatoes into large pieces. Do not cut your potatoes too small or they will get too soft.

    Step 2: Next, set your Instant Pot to the sauté function. Once hot, add the olive oil and onion. Stir while cooking for 1 minute.

    Step 3: Add chopped cabbage and potatoes and stir to combine.

    Step 4: Stir in the salt, black pepper, garlic powder and vegetable broth and put the lid on.

    Step 5: Press Cancel on the Instant Pot. Then, set it to high pressure and cook for 5 minutes. It may need 5-10 minutes to warm up first.

    Step 6: When the 5 minutes are up, Quick Pressure Release the steam.  Do not use Natural Release or else it will overcook and the vegetables will be mushy.

    Plate with cabbage and onions with a fork and green napkin.

    Stir, taste and adjust the seasoning, and serve.

    Expert Tips

    • I highly recommend following the directions and sauteing the onion first as it adds a depth of flavor.  But you can also just add all the ingredients to the Instant Pot and cook for 5 minutes.
    • This cabbage recipe has a mellow flavor. You can spice it up by adding some red pepper flakes or a dash of hot sauce.
    • Make sure you Quick Release the steam on the Instant Pot. If you use the natural release, it will be overcooked and the potatoes will be a bit mushy.

    What type of cabbage is best for this recipe?

    I like regular green cabbage best in this recipe.  Red cabbage works as well and gives it a slightly sweet flavor.

    Is this recipe gluten-free?

    Yes, this recipe is naturally gluten-free.  However, check the vegetable broth packaging to ensure the brand you use is safe.

    How do you store leftover cabbage and potatoes?

    Once it's completely cooled, store in an airtight container in the fridge for up to 4 days.  To reheat, I recommend simply microwaving it.

    Ingredients

    • 1 tablespoon olive oil
    • 1 onion, sliced into rings
    • 1 medium cabbage, cored and chopped
    • 4 potatoes, peeled and cut into large pieces
    • ½ teaspoon salt or more to taste
    • ¼ teaspoon pepper or more to taste
    • ½ teaspoon garlic powder
    • ½ cup vegetable broth

    • Set your Instant Pot to sauté. Once hot, add olive oil and onion. Stir while cooking for 1 minute.
    • Add chopped potatoes and cabbage and stir to combine.

    • Stir the cooked potatoes carefully so they don't break apart.
    • This cabbage dish has a mellow flavor.  Feel free to spice it up with some red pepper flakes.

      So easy to make in an Instant Pot. Cabbage and potatoes work so well together and the cabbage gets nice and mellow as it cooks. It works as a side dish or I also have a plate of it for a light lunch.
